  • 4 salmon fillets (6 oz each)
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 2 cups fresh spinach
  • 1 cup low-sodium chicken broth
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium heat and add olive oil.
  2. Season salmon fillets with salt and pepper. Sear skin-side down for 4-5 minutes until golden brown; flip and cook for another 4 minutes. Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant. Add heavy cream and chicken broth; stir continuously.
  4. Stir in sun-dried tomatoes and fresh spinach; cook until spinach wilts.
  5. Return salmon to the skillet, allowing it to simmer in the sauce for about 2 minutes.
