  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • Gel food coloring (various colors)
  • ¼ cup cocoa powder (optional for chocolate pinwheels)

Instructions

  1. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time along with vanilla extract, mixing well after each addition.
  2. In another bowl, whisk together flour and cocoa powder (if using). Gradually add this mixture into the wet ingredients until fully combined.
  3. Divide the dough based on desired colors. Add gel food coloring to each portion until you achieve your preferred shades.
  4. Roll out each colored dough between two sheets of parchment paper into rectangles about ¼ inch thick. Layer them carefully on top of each other.
  5. Starting from one end, roll the layered dough tightly into a log shape. Wrap in plastic wrap and chill in the refrigerator for about an hour.
  6. Preheat the oven to 350°F (180°C). Slice the chilled log into half-inch rounds and place on a baking sheet lined with parchment paper. Bake for 10-12 minutes or until slightly golden around the edges.
