  • 1 3/4 cups icing sugar
  • 3 large egg whites (room temperature)
  • 1/2 cup granulated sugar
  • Gel food coloring (as desired)
  • 1/2 cup unsalted butter (room temperature)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (or flavor of your choice)

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whip egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
  3. In another bowl, sift together almond flour and icing sugar. Gently fold into the whipped egg whites along with food coloring until just combined.
  4. Pipe small circles onto prepared sheets, allowing space between each macaron. Let them sit at room temperature for 30 minutes until they form a skin.
  5. Bake for 20 minutes or until puffed and firm to the touch. Allow to cool completely before filling.
