  • 1/2 cup unsweetened cocoa powder
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 3/4 cup fruit preserves (raspberry or apricot)

Instructions

  1. 1. Preheat oven to 350°F (175°C). Cream together softened butter and powdered sugar until light and fluffy. Mix in egg yolk and vanilla.
  2. 2. In another bowl, whisk together flour and cocoa powder. Gradually combine with the wet mixture until a smooth dough forms.
  3. 3. Wrap dough in plastic wrap and chill for about one hour.
  4. 4. Roll out chilled dough to 1/8-inch thickness. Cut shapes using cookie cutters; half should have a cut-out center.
  5. 5. Place cut-out cookies on parchment-lined baking sheets and bake for 10-12 minutes. Let cool completely.
  6. 6. Spread fruit preserves on half of the cookies and top with remaining cookies. Dust with powdered sugar if desired.
