  • 1/2 cup peanut butter (or almond butter)
  • 1/3 cup maple syrup
  • 2 tsp pumpkin spice
  • 1 cup dark chocolate chips

Instructions

  1. Gather all ingredients and tools: mixing bowl, spatula, parchment paper, and microwave-safe bowl.
  2. In a mixing bowl, combine pumpkin puree, rolled oats, peanut butter, maple syrup, and pumpkin spice. Mix until smooth.
  3. Scoop out portions of dough and form small patties on parchment paper-lined trays.
  4. Chill the patties in the fridge for about 30 minutes to firm up.
  5. Melt dark chocolate chips in a microwave-safe bowl in short intervals (15-20 seconds), stirring until smooth.
  6. Dip half of each cookie into melted chocolate and place back on parchment paper. Optionally sprinkle with chopped nuts or sea salt before the chocolate sets.
  7. Chill again for 15-20 minutes until set.
