  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup whole milk
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, salt, and sugar.
  3. In another bowl, beat eggs, milk, oil, and vanilla until smooth. Combine wet and dry ingredients until just mixed.
  4. Fill each liner two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean. Let cool completely.
  5. While cooling, whip heavy cream with powdered sugar until soft peaks form.
  6. Melt chocolate chips in the microwave or over low heat; dip cooled cupcakes into chocolate until fully coated. Allow excess to drip off.
  7. Once set, pipe whipped cream filling into the center of each cupcake.
