  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 cups shredded cheese (1 cup cheddar, 1 cup Monterey Jack)
  • 4 large flour tortillas
  • 1 cup bell peppers, sliced (any color)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season chicken with salt, pepper, cumin, and chili powder. Heat olive oil in a skillet over medium-high heat and cook chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from heat and shred the chicken.
  2. In the same skillet, sauté bell peppers and garlic for 3-4 minutes until tender.
  3. Layer shredded chicken, sautéed veggies, and cheese on half of each tortilla. Fold over.
  4. Cook each filled tortilla in the skillet for about 3-4 minutes per side until golden brown and crispy.
  5. Let cool slightly before slicing into wedges. Serve hot with salsa or sour cream.
