  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 lb potato gnocchi
  • 1.5 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 0.5 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook for 6-7 minutes per side until golden brown and cooked through. Remove and let rest.
  2. In the same skillet, sauté minced garlic for about a minute until fragrant.
  3. Add gnocchi and marinara sauce to the skillet, stirring gently to coat. Cook on medium heat for about 3 minutes.
  4. Slice the rested chicken and return it to the skillet with gnocchi. Sprinkle mozzarella on top and cover with a lid. Cook on low until cheese is melted (about 5 minutes).
  5. Before serving, sprinkle freshly grated Parmesan over the dish.
