  • 1 medium onion, finely chopped
  • 2 tablespoons low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Set up a dredging station with separate bowls for flour, beaten eggs, and panko breadcrumbs. Season each bowl lightly with salt and pepper.
  2. Dredge each chicken breast in flour, dip in eggs, then coat fully in panko breadcrumbs.
  3. Heat oil in a skillet over medium heat. Fry each chicken piece for about 5 minutes per side until golden brown and cooked through.

  5. Pour in coconut milk and soy sauce; simmer for about 10 minutes to meld flavors.
