  • 34 boneless, skinless chicken breasts (approximately 1 lb)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 cup colorful bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 cup uncooked long-grain rice
  • 2 cups shredded cheese (cheddar and Monterey Jack)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, heat olive oil. Add onions and bell peppers; sauté until softened (about 5 minutes). Stir in garlic for the last minute.
  3. Season chicken breasts with salt and pepper; add to the skillet. Cook until golden brown on both sides (about 4 minutes per side). Remove from heat.
  4. Let chicken cool slightly, shred with two forks, and mix with sautéed vegetables, uncooked rice, enchilada sauce, and half of the cheese in a bowl.
  5. Transfer the mixture to the prepared baking dish and top with remaining cheese.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden brown.
