4 boneless, skinless chicken breasts
8 slices thin deli ham
8 slices Swiss cheese
1 cup seasoned breadcrumbs
2 large eggs
½ cup all-purpose flour
3 tablespoons unsalted butter (for sauce)
¼ cup all-purpose flour (for sauce)
2 cups low-sodium chicken broth
1 cup heavy cream
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C). Pound the chicken breasts between plastic wrap until about half an inch thick.
Lay each chicken breast flat, top with a slice of ham and cheese, then roll tightly and secure with toothpicks.
Set up a dredging station with one bowl of flour, one of beaten eggs, and one of breadcrumbs. Coat each chicken roll in flour, dip in eggs, then roll in breadcrumbs.
Place seam-side down in a greased baking dish and bake for 25-30 minutes until golden brown and internal temperature reaches at least 165°F (75°C).
For the sauce, melt butter in a saucepan over medium heat, whisk in flour, add chicken broth gradually while stirring until thickened. Stir in heavy cream and season with salt and pepper.
Let chicken cool slightly before removing toothpicks; slice open for presentation and drizzle sauce over each piece before serving.
