  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 4 large flour tortillas
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • Vegetable oil for frying (enough to submerge chimichangas)
  • ½ cup sour cream
  • 1 cup salsa

Instructions

  1. Season chicken with salt, pepper, chili powder, and cumin. Cook in a skillet over medium heat for about 6-7 minutes per side until golden brown and cooked through. Shred the chicken.
  2. In a bowl, mix shredded chicken with minced garlic and half of the cheese.
  3. Spoon about a quarter cup of filling onto each tortilla. Fold sides in and roll tightly from bottom to top.
  4. Heat vegetable oil in a deep skillet to about 350°F. Fry each chimichanga seam-side down for 3-4 minutes per side until golden brown.
  5. Drain on paper towels, sprinkle with remaining cheese while hot, and serve with sour cream and salsa.
