  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 8 frozen waffles (approx. 300g)
  • 1 cup pure maple syrup (240ml), divided
  • 4 large eggs
  • 1 cup whole milk (240ml)
  • Salt and pepper to taste
  • 2 green onions, chopped (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper; cook in a skillet over medium heat until golden brown (5-7 minutes per side). Let cool, then chop into bite-sized pieces.
  3. In a bowl, whisk together eggs, milk, and half of the maple syrup until smooth.
  4. Layer half of the waffles in the baking dish followed by half of the chicken. Repeat with remaining waffles and chicken.
  5. Pour egg mixture evenly over the layers and press down gently.
  6. Bake for 30-35 minutes or until set and golden on top. Serve with remaining maple syrup drizzled on top.
