  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup fresh cherries, pitted and halved
  • ¼ cup amaretto liqueur
  • 1 cup brewed espresso or strong coffee, cooled
  • 3 tbsp sugar

Instructions

  1. Gather all ingredients and brew the coffee; let it cool slightly.
  2. In a bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, mix mascarpone cheese with sugar until smooth.
  4. Gently fold the whipped cream into the mascarpone mixture.
  5. Briefly dip each ladyfinger into the coffee and amaretto mixture.
  6. Layer soaked ladyfingers in a serving dish, followed by half of the mascarpone mixture and half of the cherries. Repeat layers.
  7. Cover with plastic wrap and refrigerate for at least four hours or overnight. Top with remaining cherries before serving.
