  • 4 medium russet potatoes (about 1.5 lbs), diced
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream (for topping)
  • ¼ cup green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Wash and dice the russet potatoes into bite-sized cubes. Toss them in olive oil until evenly coated.
  3. Sprinkle the taco seasoning over the potatoes and mix well.
  4. Spread the seasoned potatoes on the prepared baking sheet and bake for 25–30 minutes, flipping halfway through until golden brown and crispy.
  5. Remove from the oven and sprinkle cheddar and Monterey Jack cheese over the hot potatoes. Bake for an additional 5–7 minutes until melted.
