  • 2 cups russet potatoes (about 2 large)
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • 2 tsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp cumin

Instructions

  1. Boil peeled and chopped russet potatoes in salted water until fork-tender (15-20 minutes). Drain and return to the pot.
  2. Add shredded cheddar cheese, salt, pepper, and cumin to the potatoes. Mash until smooth.
  3. Warm flour tortillas in the microwave or on a skillet until pliable.
  4. Take 2 tablespoons of the potato mixture and place it on one edge of a tortilla. Roll tightly but gently.
  5. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Place rolled taquitos seam-side down on the sheet and brush lightly with olive oil.
  6. Bake for about 20 minutes or until golden brown and crispy.
