  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1 tsp garlic powder

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Blanch the chopped broccoli in boiling water for 2 minutes, then drain and chop further if needed.
  3. 3. In a mixing bowl, combine cooked rice, chopped broccoli, ¾ cup cheese (reserve ¼ cup for topping), eggs, garlic powder, salt, and pepper. Mix until well combined.
  4. 4. Spray a muffin tin with nonstick spray or line with cupcake liners. Spoon the mixture evenly into each cup and top with reserved cheese.
  5. 5. Bake for 20-25 minutes until golden brown. Allow to cool slightly before serving.
