  • 4 cups whole milk (or almond/coconut milk for dairy-free)
  • 1/2 cup granulated sugar (adjust to taste)
  • 4 cardamom pods (crushed)
  • Zest of 1 orange
  • 1 cinnamon stick
  • 1 tsp vanilla extract

Instructions

  1. Rinse Arborio rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice and 2 cups water; bring to boil, then simmer for 15-20 minutes until tender.
  3. Add milk, sugar, crushed cardamom pods, orange zest, and cinnamon stick to the cooked rice; stir well and simmer gently for about 20 minutes, stirring occasionally.
  4. Stir in vanilla extract and continue cooking until thickened, about another 10 minutes.
  5. Remove from heat, discard the cinnamon stick and cardamom pods. Allow cooling before serving in bowls.
  6. Serve warm or chilled, garnished with additional orange zest or chopped nuts if desired.
