  • ½ cup unsalted butter (melted)
  • 1 cup pumpkin puree (canned)
  • 8 oz cream cheese (softened)
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed, then press into the bottom of the prepared dish.
  3. In another bowl, beat softened cream cheese and brown sugar until smooth. Add pumpkin puree, eggs, cinnamon, nutmeg, and vanilla; mix until combined.
  4. Pour the pumpkin cheesecake mixture over the crust and smooth out with a spatula.
  5. Bake for 30-35 minutes or until slightly jiggly in the center; cool completely at room temperature before refrigerating for at least two hours.
  6. Slice into squares and serve chilled or at room temperature.
