  • ½ cup bell peppers (sliced)
  • ½ cup zucchini (sliced)
  • ½ cup fresh mozzarella cheese (sliced)
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil (divided)
  • Salt to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt. Sauté until golden brown and caramelized, about 15-20 minutes.
  2. In the same skillet, add bell peppers and zucchini. Cook for an additional 5-7 minutes until slightly softened but still crunchy.
  3. Assemble the panini by spreading mozzarella on one slice of ciabatta. Layer with caramelized onions and sautéed veggies, then drizzle with balsamic vinegar before topping with the second slice.
  4. Preheat a grill pan or sandwich press over medium heat. Brush both sides of the assembled sandwich with remaining olive oil. Grill for about 3-4 minutes per side until golden brown and crispy.
