  • 3 ripe bananas (about 300g), sliced
  • 4 cups day-old brioche or challah bread, torn into chunks
  • 4 large eggs
  • 2 cups whole milk
  • 1/2 cup granulated sugar (or brown sugar for added depth)
  • 1/4 cup unsalted butter, melted
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. In a pan over medium heat, caramelize the banana slices with a sprinkle of sugar until golden (about 5 minutes).
  3. In a large bowl, combine the torn bread and caramelized bananas.
  4. In another bowl, whisk together eggs, milk, melted butter, sugar, and cinnamon until smooth. Pour over the bread mixture and let soak for 20 minutes.
  5. Transfer to the prepared baking dish and bake for 40-45 minutes until golden brown and set in the middle.
  6. Allow to cool slightly before serving with whipped cream or ice cream.
