  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 23 tbsp ice water
  • 1/2 cup granulated sugar (for filling)
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup unsalted melted butter
  • Optional: 1/4 cup raisins or pecans

Instructions

  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine flour, salt, and granulated sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water until the dough holds together. Wrap and refrigerate for at least 30 minutes.
  3. Roll out chilled dough on a floured surface to about an eighth-inch thick. Cut into circles and press into greased muffin tins.
  4. In another bowl, whisk together granulated sugar, brown sugar, eggs, vanilla extract, and melted butter until smooth. Fold in raisins or pecans if desired.
  5. Spoon filling into each shell, leaving space at the top for puffing during baking.
  6. Bake for 15-20 minutes until golden brown and bubbly. Cool for at least ten minutes before serving.
