  • 4 cups mixed greens (spinach, arugula, kale)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pomegranate seeds
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the butternut squash and cut it into cubes. Toss with olive oil, salt, and pepper on a baking sheet.
