  • 1 ¾ cups icing sugar
  • 3 large egg whites (room temperature)
  • ½ cup granulated sugar
  • 2 tsp blue raspberry flavoring
  • 12 drops pink food coloring
  • ½ cup heavy cream
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. Sift almond flour and icing sugar together twice.
  3. In a separate bowl, whisk egg whites until frothy; gradually add granulated sugar until stiff peaks form.
  4. Gently fold in blue raspberry flavoring and pink food coloring, followed by the almond flour mixture until smooth.
  5. Pipe small circles onto prepared sheets, about an inch apart. Tap sheets to release air.
  6. Let macarons rest for 30 minutes until they form a skin.
  7. Bake for 15-20 minutes; cool completely on wire racks.
  8. For the filling, heat heavy cream until simmering; pour over white chocolate chips and stir until smooth. Pair macaron halves with ganache.
