  • 2 lbs Chuck Roast or Brisket
  • 4 Dried Guajillo Peppers
  • 1 medium Onion, chopped
  • 4 Garlic Cloves
  • 4 cups Low-Sodium Beef Broth
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 8 Corn Tortillas
  • 1 cup Shredded Cheese (Oaxaca or Mozzarella)

Instructions

  1. Trim excess fat from the meat and cut it into large chunks.
  2. Soak guajillo peppers in warm water for 15 minutes until softened.
  3. Blend soaked peppers, onion, garlic, beef broth, cumin, oregano, and a pinch of salt until smooth.
  4. In a pot over medium heat, combine beef chunks with the blended sauce. Simmer covered for about 2 hours until tender.
  5. Shred the cooked meat and return it to the pot with juices.
  6. Warm tortillas on a skillet, fill with shredded beef and cheese, fold, and toast until golden brown.
