  • 4 medium russet potatoes, sliced thin

  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup shredded cheddar cheese
  • Salt, pepper, thyme, and paprika (to taste)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, brown the ground beef for 7-10 minutes; drain excess fat.
  3. Add chopped onion and minced garlic to the skillet; sauté until onion is translucent (about 3-4 minutes).
  4. Layer half of the sliced potatoes in the baking dish, followed by half of the beef mixture; repeat with remaining potatoes and beef.
  5. Pour beef broth evenly over the layers.
  6. Cover with aluminum foil and bake for 1 hour. Remove foil during the last 15 minutes to brown the cheese.
