  • 1 whole chicken (cut into pieces)
  • 2 cups basmati rice (rinsed and soaked for 30 minutes)
  • 2 large onions (diced)
  • 4 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1 can (14 oz) diced tomatoes
  • 3 tbsp Kabsa spice mix (cumin, coriander, black pepper, cardamom, cinnamon, cloves)
  • 4 cups water
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until golden brown. Add minced garlic and cook until fragrant.
  2. Add chicken pieces to the pot and season with salt and pepper. Brown on all sides for about 5-7 minutes.
  3. Stir in the Kabsa spice mix and diced tomatoes. Cook for an additional 2 minutes.
  4. Drain soaked rice and add it to the pot. Pour in enough water to cover by an inch. Bring to a boil, reduce heat to low, cover, and simmer for 20-25 minutes.
  5. Once cooked, fluff the rice gently with a fork and garnish with fresh cilantro before serving.
