Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 3 medium Granny Smith apples, peeled and thinly sliced
  • 2 tsp ground cinnamon
  • ½ cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and ¼ cup granulated sugar. Press this mixture into the bottom of a springform pan and bake for 10 minutes.
  2. In another bowl, beat the cream cheese until smooth. Gradually add the remaining sugar and sour cream, mixing until creamy. Incorporate eggs one at a time, beating well after each addition, then pour over the crust.
  3. Toss apple slices with brown sugar and cinnamon in a separate bowl. Spread evenly over the cheesecake layer.
  4. In another bowl, combine remaining graham cracker crumbs with melted butter, brown sugar, and cinnamon for the crumble topping. Sprinkle it over the apples.
  5. Bake for 45-50 minutes until set around edges but slightly jiggly in the center. Allow cooling before refrigerating for at least four hours before serving.
