Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons curry powder
  • 1 cup low-sodium chicken broth
  • 2 medium Granny Smith or Honeycrisp apples, diced
  • 1 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then sauté for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  2. In the same skillet, add chopped onions and minced garlic. Sauté for about 3-4 minutes until onions are translucent.
  3. Sprinkle in curry powder while stirring constantly. Add diced apples and chicken broth; bring to a simmer.
  4. Stir in coconut milk until well combined. Return the chicken to the skillet and let simmer gently for another 10 minutes.
  5. Taste and adjust seasoning if necessary. Serve warm over rice or quinoa.
