  • 1 cup agar-agar powder
  • 2 cups water (for jelly)
  • 1 cup sweet red bean paste (canned or homemade)
  • 1 cup assorted seasonal fruits (such as strawberries, mangoes, and kiwi)
  • ½ cup kuromitsu syrup (or honey/maple syrup)
  • 1 cup ice shavings for serving (optional)

Instructions

  1. Prepare the agar-agar jelly by boiling 2 cups of water according to package instructions. Whisk in the agar-agar powder until fully dissolved. Pour into a mold and let cool until set.
  2. If using canned red bean paste, it’s ready to use. For homemade, boil adzuki beans until tender, mash with sugar, and let cool.
  3. Chop your seasonal fruits into bite-sized pieces.
  4. Once the jelly has set, cut it into cubes. In serving bowls, layer the jelly cubes with red bean paste and fresh fruits.
  5. Drizzle generously with kuromitsu syrup and top with ice shavings if desired.
