  3. In another bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy. Mix in the egg and vanilla extract.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the chopped Andes mints.
  6. Scoop tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  7. Bake for approximately 10 minutes until edges are firm but centers remain soft. Cool on the baking sheet for five minutes before transferring to wire racks.
