  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together amaranth flour, baking powder, and salt.
  3. In another bowl, mix eggs, milk, honey, and chopped dates until smooth.
  4. Gently combine wet and dry ingredients until just mixed.
  5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes until a toothpick comes out clean.
  6. Allow cooling in the pan for ten minutes before transferring to a wire rack.
