  • 1 ½ cups all-purpose flour

  • 1 cup granulated sugar

  • ⅓ cup vegetable oil (or olive oil)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Steam the raw beets until fork-tender (about 15-20 minutes), then blend into a smooth puree.
  3. In a mixing bowl, sift together flour, cocoa powder, baking powder, sugar, and salt.
  4. In another bowl, whisk together the beet puree, eggs, vegetable oil, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  6. Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean. Allow cooling before serving.
