Three Cheese Chicken & Broccoli Alfredo is a rich and creamy dish that brings together tender chicken, fresh broccoli, and a blend of three delicious cheeses.   • 3 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cups fresh broccoli florets
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Season the chicken with salt and pepper, cooking for about 6-7 minutes on each side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, add broccoli florets with a splash of water; cover and steam for 3-4 minutes until bright green.
  4. Reduce heat to low; pour in heavy cream while scraping bits from the pan. Gradually mix in Parmesan, mozzarella, cream cheese, garlic powder, salt, and pepper until smooth.
  5. Slice the cooked chicken into bite-sized pieces and return it to the skillet along with pasta and broccoli. Stir until well coated in sauce.
  6. Serve immediately while hot, optionally drizzling with extra cheese.
