  • 2 cups grated carrots (about 4 medium carrots)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. Fold in grated carrots.
  3. In a separate bowl, mix eggs and vanilla until combined. Gradually add this mixture to the carrot mixture.
  4. In another bowl, beat cream cheese until smooth; add sour cream and sugar, mixing well before incorporating eggs one at a time.
  5. Layer half the carrot batter in the pan followed by half the cheesecake filling; repeat with remaining batter and filling.
  6. Bake for about 60 minutes until the edges are set but the center slightly jiggles. Cool at room temperature then refrigerate for at least four hours before serving.
