Thai Tea Crème Brûlée is a decadent fusion dessert that marries the creamy indulgence of traditional crème brûlée with the exotic flavors of Thai tea.   • 2 cups heavy cream
  • 3 tbsp Thai tea leaves
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp brown sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C). Arrange ramekins in a baking dish.
  2. In a saucepan over medium heat, combine heavy cream and Thai tea leaves. Heat until hot but not boiling; steep for 15 minutes.
  3. In a bowl, whisk together egg yolks and granulated sugar until pale. Gradually add the infused cream while whisking constantly.
  4. Stir in vanilla extract. Strain the mixture into ramekins, filling them three-quarters full.
  5. Pour hot water into the baking dish halfway up the sides of the ramekins. Bake for 30-35 minutes until just set but still jiggly in the center.
  6. Cool completely, then refrigerate for at least two hours or overnight. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize until golden.
