  • 1 cup oat flour
  • 1/2 cup semi-sweet or dark chocolate chips
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil (melted) or unsalted butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Boil sweet potato chunks until fork-tender, about 15 minutes. Drain and mash until smooth.
  3. In a bowl, mix mashed sweet potatoes, maple syrup, melted coconut oil, and vanilla until combined.
  4. In another bowl, whisk oat flour, baking powder, and salt. Fold into the wet mixture until just combined.
  5. Gently stir in chocolate chips.
  6. Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool before slicing.
