Kyiv Cake, or Kyivsky Tort, is a traditional Ukrainian dessert that captivates with its layers of crispy meringue, velvety buttercream, and crunchy nuts.   • 4 large egg whites
  • 1 cup granulated sugar
  • 1 cup chopped walnuts or hazelnuts (toasted)
  • 1 cup unsalted butter (softened)
  • 2 tsp vanilla extract
  • 2 cups sifted icing sugar

Instructions

  1. Preheat the oven to 250°F (120°C). Line two baking sheets with parchment paper, tracing two 8-inch circles.
  2. In a clean bowl, whisk egg whites until soft peaks form. Gradually add sugar while whisking until stiff peaks form (about 5-7 minutes).
  3. Gently fold in the toasted chopped nuts into the meringue mixture.
  4. Spoon equal amounts of meringue onto the prepared circles and bake for about 1 hour until dry and crisp. Let cool on wire racks.
  5. Beat softened butter and icing sugar until creamy; add vanilla extract and mix until fluffy.
  6. Once cooled, remove parchment from meringues. Layer one meringue on a serving plate, spread with buttercream, add the second layer, and top with more buttercream or nuts if desired.
