  • 1 cup fresh mozzarella cheese (shredded)
  • 1/2 cup semolina flour
  • 1/3 cup sugar (adjust to taste)
  • 1 cup whole milk
  • 2 tsp rose water
  • 1/4 cup chopped pistachios (for garnish)

Instructions

  1. In a large bowl, mix shredded mozzarella cheese, semolina flour, and sugar until smooth.
  2. Heat whole milk in a saucepan over medium heat until simmering. Gradually stir in the cheese mixture until it thickens and pulls away from the sides of the pan.
  3. Remove from heat and mix in rose water for added aroma.
  4. Transfer the mixture onto a greased surface and shape into small rectangles or squares while still warm.
  5. For the syrup, heat equal parts sugar and water in another saucepan until syrupy. Drizzle over cooled pieces of Halawet El Jibn.
  6. Garnish with chopped pistachios and serve chilled or at room temperature.
