  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup brown sugar
  • 1/2 cup silken tofu
  • 2 Earl Grey tea bags
  • 1/3 cup melted coconut oil
  • 1 cup coconut cream
  • 1/4 cup freshly squeezed lemon juice
  • 1 tsp agar-agar powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8 inch baking pan.
  2. Brew Earl Grey tea by steeping tea bags in boiling water for about five minutes. Let it cool.
  3. In a blender, combine silken tofu, brown sugar, cooled tea, and melted coconut oil. Blend until smooth.
  4. In a separate bowl, whisk together gluten-free flour and cocoa powder. Gradually mix into the wet ingredients.
  5. Pour batter into the prepared pan and bake for 25 minutes, or until a toothpick comes out clean. Allow to cool in the pan.
  6. For panna cotta, heat coconut cream, lemon juice, agar powder, and sugar in a saucepan until combined. Bring to a gentle boil while stirring.
  7. Remove from heat and pour over cooled brownies. Let set before serving.
