  1. Preheat oven to 325°F (160°C) and prepare ramekins.
  2. Melt dark chocolate in a heatproof bowl over simmering water until smooth.
  3. In a saucepan, heat heavy cream with vanilla until steaming but not boiling.
  4. In another bowl, whisk egg yolks and sugar until pale. Gradually mix in hot cream.
  5. Combine melted chocolate with the egg mixture and pour into ramekins.
  6. Place ramekins in a baking dish filled with hot water halfway up the sides. Bake for 30-35 minutes until set but slightly jiggly.
  7. Cool and refrigerate for at least 2 hours. Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
