  • 2 large eggs
  • 2 tbsp granulated sugar (or honey/maple syrup)
  • 1 tsp pure vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. In a medium saucepan over medium heat, combine rolled oats and milk. Stir until simmering and thickened, about 5 minutes.
  2. In a separate bowl, whisk together eggs, sugar, vanilla extract, and a pinch of salt. Gradually mix this into the oatmeal while stirring vigorously to avoid scrambling the eggs.
  3. Cook on low for another 2–3 minutes until creamy. Remove from heat.
  4. In another saucepan over medium heat, combine mixed berries and lemon juice. Simmer for about 4 minutes until softened.
  5. Stir in cornstarch mixed with water to thicken the compote.
  6. Spoon the berry compote over the custard oats and serve warm or chilled.
