  • 16 oz cream cheese, softened
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • 3 large eggs

  • 2 tsp pumpkin spice

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper or nonstick spray.
  2. In a bowl, mix graham cracker crumbs and melted butter; press into the bottom of the pan to create the crust.
  3. Beat cream cheese in a separate bowl until smooth; gradually add sugar and beat until fluffy.
  4. Mix in pumpkin puree, eggs (one at a time), vanilla extract, and pumpkin spice until well combined.
  5. Pour the filling over the crust and spread evenly. Bake for 30-35 minutes or until set but slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
