  • 1 cup unsalted pistachios (finely chopped)
  • 1 cup mascarpone cheese
  • 20 ladyfingers
  • 1 cup freshly brewed espresso (cooled)
  • ½ cup granulated sugar
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Brew one cup of strong espresso and let it cool completely.
  2. In a large bowl, combine mascarpone cheese and granulated sugar. Whip with an electric mixer until smooth and creamy (about 2 minutes).
  3. Finely chop half of the pistachios and reserve some whole for garnish.
  4. Quickly dip each ladyfinger into cooled espresso and arrange them in a rectangular dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the crushed pistachios.
  6. Repeat with another layer of dipped ladyfingers, then top with remaining mascarpone mixture. Smooth out the surface.
  7. Cover with plastic wrap and refrigerate for at least 4 hours (or overnight). Before serving, dust generously with cocoa powder and add remaining pistachios.
