  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1/4 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 cup heavy cream (for filling)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a jelly roll pan with parchment paper and grease it lightly.
  2. In a large bowl, whisk together gluten-free flour, cocoa powder, granulated sugar, and eggs until smooth. Stir in melted butter and vanilla extract.
  3. Spread the batter evenly in the prepared pan and bake for 15-20 minutes or until a toothpick inserted comes out clean.
  4. Turn the cake onto a powdered sugar-dusted kitchen towel while still warm. Gently roll it up with the towel inside and let it cool completely.
  5. Whip heavy cream until soft peaks form; fold in softened cream cheese and powdered sugar until well combined.
  6. Carefully unroll the cooled cake, spread filling evenly, then roll back up without the towel. Place seam-side down on a serving platter.
  7. Frost generously with whipped cream or chocolate frosting before serving.
