Ingredients

Scale
  • 1 ½ cups gluten-free flour blend
  • ½ cup unsalted butter (cold, cubed)
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup heavy cream
  • 2 cups fresh seasonal fruits (e.g., strawberries, blueberries, kiwis)

Instructions

  1. Preheat the oven to 350°F (175°C). In a large bowl, whisk together gluten-free flour and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Mix in one egg and vanilla extract.
  2. Press the dough into a tart pan with a removable bottom, about half an inch thick. Prick the bottom with a fork and bake for 20 minutes or until golden.
  3. While the crust bakes, whisk together heavy cream, remaining eggs, sugar, and vanilla until smooth.
  4. Pour the filling into the baked crust and return it to the oven for another 25-30 minutes until set.
  5. Let cool slightly before topping with sliced fresh fruits artfully arranged on top.
  6. Chill completely before slicing and serving.
