  • 1 cup graham cracker crumbs
  • 1/2 tsp ground ginger
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 8 oz cream cheese, softened
  • 2 large eggs, at room temperature
  • 1/4 cup unsulfured molasses
  • Whipped cream for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, ground ginger, melted butter, and sugar until it resembles wet sand. Press into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, then mix in molasses until fully combined.
  4. Spread the cheesecake mixture over the crust and smooth the top with a spatula.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least two hours.
  6. Cut into squares and serve topped with whipped cream.
