  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 (14.5 oz) cans diced tomatoes with green chilies
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • 4 cups low-sodium beef broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked; drain excess fat.
  2. Add the chopped onion, bell peppers, and garlic; sauté for about 5 minutes until softened.
  3. Stir in the diced tomatoes (with juices), kidney beans, beef broth, chili powder, cumin, salt, and pepper; mix well.
  4. Bring to a boil, then reduce heat to low and let simmer for 30 minutes.
