  • 2 (6 oz) fresh salmon fillets
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup bacon bits (about 4 strips cooked)
  • 1 avocado, sliced
  • 2 hard-boiled eggs, chopped
  • ¼ cup lemon vinaigrette

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Season salmon fillets with salt, pepper, and olive oil. Bake for 15–20 minutes until flaky.
  2. While the salmon bakes, rinse and dry the romaine lettuce. Place it in a large bowl.
  3. Chop the cherry tomatoes and cucumber; add them to the bowl with the lettuce.
  4. Cook the bacon in a skillet over medium heat until crispy; chop into bits.
  5. Once the salmon cools slightly, flake it into chunks and combine it with salad ingredients along with avocado slices and chopped eggs.
  6. Drizzle lemon vinaigrette over the salad; toss gently to combine.
