  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 8 oz short pasta (penne or rotini)
  • 14.5 oz canned diced tomatoes (fire-roasted preferred)
  • 2 cups low-sodium chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop chicken into bite-sized pieces and slice the bell peppers and onion.
  2. Heat olive oil in a large pot over medium heat. Brown the chicken for about five minutes until golden; season with salt, pepper, chili powder, and cumin.
  3. Remove the chicken and sauté onions and bell peppers in the same pot for about five minutes until softened. Add minced garlic and cook for an additional minute.
  4. Return the chicken to the pot with diced tomatoes and chicken broth; bring to a gentle simmer.
  5. Stir in uncooked pasta and cover the pot. Cook for about 10-12 minutes until pasta is al dente.
